I use this recipe for zuchinni bread, also.  You may have to adjust the quantity of squash, depending on how much moisture it contains.

YELLOW SQUASH BREAD

 

INGREDIENTS:

 

1 1/2 cups all purpose flour

1 tsp. Baking powder

1/2 tsp baking soda

1/4 tsp. Salt

2 tsp. Ground cinnamon

 

2 eggs

3/4 cup sugar

1/2 cup vegetable oil

2 tsp. Vanilla

1 2/3 cup shredded yellow squash

 

 

 PROCEDURES:

 

Combine flour, baking powder, baking soda, salt and cinnamon in a medium bowl.  Set aside.

 

Combine eggs, sugar, oil and vanilla in another large bowl.

 

Beat well and stir in shredded squash.

 

Add the dry ingredients and stir all together until moistened.

 

Pour the batter into a greased and floured loaf pan.

 

Bake in pre-heated 350º oven for 50 minutes or until a toothpick comes out clean.

 

Cool in pan for 10 minutes and remove loaf to a wire rack to cool.
