This is an excellent companion bread for pizza.  Goes nicely with a glass of a good Chianti wine.

FOCACCIA BREAD

 

INGREDIENTS:

1 3/4 Cups + 1 Tablespon All Purpose flour

3/4 teaspoon salt

3/4 teaspoon white sugar

2 teaspoons active dry yeast

3/4 teaspoon garlic powder

3/4 teaspoon dried oragano

3/4 teaspoon dried thyme

1/4 teaspoon dried basil

2/3 pinch ground black pepper

2 teaspoons vegetable oil

2/3 cup water

1 Tablespoon + 1 teaspoon olive oil

2 Tablespoons grated Parmesan cheese

2/3 cup Mozzarella cheese

 

PROCEDURES:

1.  In a large bowl, stir together the flour, salt, sugar, yeast, garlic powder, oregano, thyme, basil and black pepper.  Mix in the vegetable oil and water.

2.  When the dough has pulled toether, turn it out onto a lightly floured surace, and knead until smooth and elastic.  Lightly oil a large bowl, place the dough in the bowl, and turn to coat with oil.  Cover with a damp cloth, and let rise in a warm place for 20 minutes.

3.  Preheat the oven to 450F (230C/Gas Mark 8).  Punch dough down, place on greased baking sheet.  Pat into a 1/2 inch thick rectangle.  Dimple lightly with finger tips.  Brush top with olive oil.  Sprinkle with Parmesan and Mozzarella cheeses.

4.  Bake in preheated oven for 15 minutes, or until golden brown.  Serve warm.

NOTE:  Takes about one hour and provides 8 serving.
